I was with the author on most things, but I'm not sure about bagels. Mine haven't turned out well when I've tried and they were a lot of work.

Using a food processor to mix the dough, for me bagels were both easy and yielded good results. But to my thinking most yeast dough recipes take some tinkering WRT brands of ingredients and quantities. If memory serves, I think my most successful bagel recipe took only 3.5 cups of flour, which meant it didn't crank out dozens at a time.
